Avocado toast has become one of the most iconic breakfast and brunch dishes of the last decade. Its rise in popularity is no surprise: the creamy richness of avocado on crisp bread is simple, nutritious, and endlessly customizable. But this version takes things to the next level. The addition of garlicky sautéed cherry tomatoes brings a warm, savory depth, while the perfectly cooked egg adds protein and texture. Finished with a sprinkle of chives and pepper, this isn’t just avocado toast—it’s a gourmet upgrade that feels as good for a lazy weekend brunch as it does for an elevated weekday breakfast.

Ingredients

  • 1 1 egg (hard-boiled)

  • 1 tsp 1 tsp chives (chopped)

  • 1 cup 149 g cherry tomatoes

  • 2 slices 2 slices bread (toasted)

  • 1 1 avocado

  • 1 clove 1 clove garlic (minced)

  • 1 tbsp 1 tbsp olive oil

  • Pinch Pinch salt

  • Pinch Pinch pepper

Directions

  • Cook the egg: Place the egg in a small pot and cover with water until fully submerged. Bring to a boil over medium-high heat. Once the water reaches a rolling boil, turn off flame, cover with a lid, and let the egg sit for 12 minutes.
  • Cool and peel: After 12 minutes, transfer the egg immediately to an ice bath. Once cooled, gently crack and roll the egg on a surface to loosen the shell. Peel and rinse to remove any remaining shell fragments (see my video for technique). Slice the egg thinly and set aside.
  • Prepare the vegetables: Chop the chives and set aside. Slice the cherry tomatoes in half.
  • Sauté the tomatoes: Heat the olive oil in a sauté pan over medium heat. Add the cherry tomatoes and cook for about 3 minutes, stirring occasionally, until the skins begin to brown. Season with a pinch of salt and pepper. Add the minced garlic and cook for an additional 2–3 minutes. Remove from heat.
  • Prepare the avocado: Slice the avocado, place in a bowl, and gently mash with a fork, leaving some small chunks for texture.
  • Toast and assemble: Toast the bread slices. Spread the mashed avocado evenly on top (be generous) and layer with sliced egg, sautéed cherry tomatoes, a pinch of pepper, and a sprinkle of chives.
  • Serve immediately and enjoy.
