Fruity Pebbles were always one of my favorite cereals growing up, so it only felt right to turn them into an espresso martini. This Fruity Pebbles Espresso Martini combines a classic vanilla espresso martini with homemade Fruity Pebbles cereal milk that’s transformed into a thick and creamy cold foam.

The cold foam is where the Fruity Pebbles flavor really comes through. Cereal is soaked in milk to create a sweet cereal milk before being combined with heavy cream and vanilla syrup. The finished martini is topped with the cold foam, crushed Fruity Pebbles, three coffee beans, and a Fruity Pebbles cereal bar for a delicious dessert-like cocktail.

What Is a Fruity Pebbles Espresso Martini?

A Fruity Pebbles Espresso Martini is a dessert-inspired version of the classic espresso martini that combines coffee, vanilla, and the sweet fruity flavor of Fruity Pebbles cereal. Rather than adding the cereal directly to the cocktail, this recipe uses Fruity Pebbles to make a flavored cereal milk that becomes the base of the cold foam.

Keeping the Fruity Pebbles primarily in the cold foam allows the espresso martini underneath to still taste like an espresso martini. Each sip gets some of the rich coffee cocktail followed by the creamy, fruity cereal flavor from the foam.

Ingredient Breakdown

Vanilla Vodka: Vanilla vodka creates the base of the cocktail and adds sweetness and vanilla flavor that pairs especially well with both espresso and Fruity Pebbles.

Coffee Liqueur: Coffee liqueur reinforces the coffee flavor while adding sweetness and body to the martini.

Fresh Espresso: Fresh espresso gives the cocktail its bold coffee flavor. Letting it cool slightly before shaking can also help keep the finished cocktail from developing an excessively thick layer of espresso foam underneath the cold foam.

Fruity Pebbles: Fruity Pebbles are soaked directly in milk to infuse their recognizable sweet and fruity cereal flavor. You’ll also use a small amount of crushed cereal on top for additional flavor, color, and texture.

Milk: Milk pulls the flavor from the cereal and creates the Fruity Pebbles cereal milk used in the cold foam. Whole milk works particularly well, but you can use your preferred milk.

Heavy Cream: Heavy cream gives the cold foam enough richness and structure to sit on top of the espresso martini instead of immediately disappearing into the drink. Dairy-free heavy cream can also be substituted.

Vanilla Syrup: A small amount of vanilla syrup sweetens the cold foam and complements the vanilla notes in the cocktail.

How to Make Fruity Pebbles Cereal Milk

The cereal milk is simple, but you’ll want to give it enough time to infuse. Combine ⅓ cup Fruity Pebbles with 2 ounces of milk in a small covered container and refrigerate for approximately 2–3 hours.

Once infused, pour everything through a fine mesh strainer into a small bowl. Gently press down on the cereal to extract as much of the flavored milk as possible. Avoid completely pulverizing the softened cereal through the strainer—you want the flavored milk without adding too much of the cereal itself.

Because Fruity Pebbles absorb some of the milk as they sit, the amount you strain out will be less than the amount you started with. You’ll need approximately 1 ounce for the cold foam.

Making the Fruity Pebbles Cold Foam

Once your cereal milk is strained, the cold foam comes together in just a few minutes. Combine 1 ounce Fruity Pebbles cereal milk with 1 ounce heavy cream and ¼ ounce vanilla syrup.

Use a handheld frother or electric milk frother to whip everything together until it becomes thick and creamy. You’re looking for a consistency that is still pourable but thick enough to create a distinct layer over the espresso martini.

Pour the cold foam slowly over the finished cocktail. If necessary, you can pour it over the back of a spoon to help create a more defined layer.

Garnishing the Espresso Martini

The garnish is what immediately makes this recognizable as a Fruity Pebbles cocktail. Once the cold foam is added, lightly sprinkle crushed Fruity Pebbles across the surface. You don’t need much—a small amount provides plenty of color without completely covering the foam.

Add three coffee beans to keep the classic espresso martini presentation, then finish with a Fruity Pebbles cereal bar positioned along the rim of the martini glass. The combination of the colorful cereal, coffee beans, and cereal bar gives you the Fruity Pebbles theme without making the presentation feel overloaded.

Tips for the Best Fruity Pebbles Espresso Martini

Use fresh espresso for the strongest coffee flavor, but you don’t need to aggressively shake the cocktail. Shake only until everything is well chilled so you don’t create an unnecessarily large layer of espresso foam that competes with the cold foam.

The cereal milk can also be prepared ahead of time. After straining, keep it covered and refrigerated until you’re ready to make the cocktail. For the best flavor and texture, I’d use it within a day.

If you’re serving multiple drinks, you can scale up the cereal milk and cold foam rather than soaking separate batches for every cocktail.
